Food Preservation – Dept. 7

 

All canned food must be in standard quart or pint jars with 2-piece lid with the exception of fish and jams, jellies, and preserves. Fish, cream style corn, and pimentos must be in pint jars only. Jams, jellies, and preserves may be in pint or half-pint jars. Standard canning jars have a brand name. Potatoes are not allowed in soup mix.
 

No paraffin seals will be accepted.
 

No food coloring allowed unless recipe calls for it.

Dried foods need not be sealed.

 

*For the 2007 NCA District Fair, white potatoes and corn will be allowed in vegetable soup mix; however, to ensure that USDA home food processing standards have been adhered to, the following requirement is made.  If white potatoes and/or whole kernel corn constitute part of the ingredients in any jar of vegetable soup mix, a small label should be attached to the bottom of the jar that indicates the number of minutes the soup mix was processed in a pressure cooker.  The recommended processing time for whole kernel corn (@10 pounds pressure) is 55 minutes for pints, 85 minutes for quarts.  White potatoes must be processed (@ 10 pound pressure) 35 minutes for pints, 40 minutes for quarts.  As a guideline, vegetable soup mix must be pressured for the length of time required by USDA for the lowest-acid vegetable in the mix, whether corn and potatoes are present of not.  Source:  “So Easy To Preserve”, The University of Georgia Cooperative Extension Service, 4th Edition, Bulletin #989.
